Smoked Tofu Fajitas

Smoked tofu is amazing and lifts fajitas to a new level!

INGREDIENTS
Sprouted grain tortillas
Central Soyfoods extra firm smoked tofu
1-2 onions
Frozen bag mixed sliced bell peppers
Mini fresh sweet peppers
1 pkg Ortega taco seasoning
Sliced avocado
Olive oil
Salsa

Slice up onion and begin to sauté in olive oil in skillet until begins to soften. Slice smoked tofu into julienne strips. Add to skillet with an additional drizzle of olive oil. Add 1/2 the package of Ortega taco seasoning. I like Ortega brand because it has few ingredients and the flavor is good.

Note: If you can’t find smoky tofu at Whole Foods, Trader Joe’s, or health food market, use regular extra firm tofu and mix it with a little cumin and liquid smoke.

Add in the frozen bag of sliced peppers. You will notice more water in the skillet from the frozen vegetables. Stir in the rest of the seasoning packet and the mini fresh peppers which will soak up the water and help coat the skillet ingredients without any additional oil needed. By mixing the frozen peppers with a few fresh mini peppers you get all nutrition and enough crunch at much lower cost. (Plus less to slice and dice).

Warm tortillas in aluminum foil in oven or just a few seconds in microwave. Slice avocado. Stuff the tortillas with fajita ingredients, add the avocado and top with salsa if you desire. Serve with mixed green salad.

The smoky flavor is incredible and like most of my quick meals, you get all the protein, antioxidants, fiber, and flavor with less fat! You won’t miss the cheese I promise. And you just saved the life of an animal:)

Variations: Add pinto beans or Daiya cheddar flavor cheese.

This meal can be made from start to finish in 10 minutes!
