Burgers & Beer: TCU Purple Paradise Veggie Dog

It may not be a burger but it's a heck of a hot dog!

TCU Frankfurters with Veggie Confetti

To all the Horned Frogs out there, this one’s for you!

TCU (Texas Christian University) joins the Big 12 this year! In honor of our Horned Frogs (my daughter included), I created a ballgame hot dog suitable for serving in the Founder’s suite of the new stadium in Fort Worth, Texas.

Leave the mustard and ketchup in the fridge. This dog has class:) and may be better served on a silver platter.

 

Purple confetti made of cabbage!

You’ll need these:

Hands down the best tasting plant based hot dogs available at the store

And this:

Whole grain loaf of bread

And these ingredients:

THE SAUCE
1/4 cup hot water
2 T white or yellow miso paste
1 tsp sugar
2 tsp arrowroot powder
THE TOPPINGS
2 cups shredded purple cabbage
1 tsp canola oil
2 chopped scallions
Garlic olive oil

Combine the sauce ingredients over low heat until it thickens. Set aside and cover.

Cut 1″ thick slices of the whole grain bread. Lightly drizzle garlic olive oil on top. Toast or broil to crisp the edges.

Grill, broil, or bake the frankfurters until heated through. I prefer grilling outdoors or on an indoor grill pan. When done, slice frankfurters length wise.

Sauté the scallions and the purple cabbage in a skillet with canola oil until they start to soften. Don’t cook so much the cabbage wilts. A little crunch adds to the taste and preserves the color.

Cook just enough to soften the vegetables slightly.

Layer your masterpiece by placing split frankfurter on top of toasted bread. Scoop sauce over hot dog. Liberally apply veggie confetti. Voila!

We’re looking forward to TCU Football this year more than ever! Playing hometown schools like KU and K-State create fun rivalries for our family. Our daughter’s a senior at TCU. Even though she’ll graduate in May, we’ll always feel a part of the Horned Frog family!

The Taste

The dark truth about this Dark Truth Stout is that it’s bold and strong. Mix a little chocolate with espresso, a hint of fruit, and roasted malt and this brew comes out of a dark cave to soar. Deserves to be sipped slowly and enjoyed with good friends. 9.7% alcohol.
