Steel Cut Oats with Caramelized Apple Crunch

No matter how cold it gets outside, this breakfast bowl will warm you up from the inside out.

The Oats

On stovetop bring 1- 1/2 cups light vanilla soy milk (or almond milk) near a boil and then stir in 1/4 cup steel cut oats. Reduce heat to low and simmer uncovered 25-30 minutes or until desired texture.

The Apples

Peel, core and dice one apple. I like Fuji apples but use whatever you like. Melt 1 tablespoon Earth Balance buttery spread in skillet. Add diced apple to pan. Sprinkle in 1 teaspoon ground cinnamon and 1 tablespoon brown sugar. Cook over low to medium heat until apples soften to your liking.

The Crunch

Chop a palm full of raw almonds and raw brazil nuts.

Place cooked steel oats in bowl and spoon over caramelized apple mixture. Top with chopped nuts. Sprinkle maple sugar on top to desired sweetness.

Grab a spoon and enjoy this special morning treat that satisfies you to the core. Bring on the day!

"Every thought is a seed. If you plant crab apples, don’t count on harvesting Golden Delicious."
