Steel Cut Oats with Caramelized Apple Crunch
On stovetop bring 1- 1/2 cups light vanilla soy milk (or almond milk) near a boil and then stir in 1/4 cup steel cut oats. Reduce heat to low and simmer uncovered 25-30 minutes or until desired texture.
Peel, core and dice one apple. I like Fuji apples but use whatever you like. Melt 1 tablespoon Earth Balance buttery spread in skillet. Add diced apple to pan. Sprinkle in 1 teaspoon ground cinnamon and 1 tablespoon brown sugar. Cook over low to medium heat until apples soften to your liking.
Chop a palm full of raw almonds and raw brazil nuts.
Place cooked steel oats in bowl and spoon over caramelized apple mixture. Top with chopped nuts. Sprinkle maple sugar on top to desired sweetness.
