I can’t rave enough about the Gardein brand of meatless deliciousness! A great option for compassionate foodies who want to eat more humanely but love their meat!

Whether you eat animal proteins or not, decreasing our meat consumption as a country must happen for the sake of our environment and our health. With foods like Gardein, meatless Monday will be a no-brainer and may lead you to cook several nights a week this way.

This product is incredible! Whether it tastes like real chicken or not is an unnecessary debate. When a product is good, it’s good– no need for comparisons.

Two dinners on display. Each took less than 10 minutes from start to finish. Just 2 strips has 16 grams of protein and only 1/2 gram of saturated fat! 

Chick’n Gardein Corn Tortilla Tacos
Corn tortillas
Chipotle Lime Gardein Crispy Fingers
1 can rinsed pinto or red beans
Ortega taco seasoning
Wholly Guacamole
Diced onion
1 fresh avocado, chopped
Dried parsley
Daiya cheddar flavor cheese

Bake crispy fingers in toaster oven or conventional oven according to package directions. I usually cook them a little longer because I like them really crispy. Warm up rinsed beans in a skillet sprayed with cooking spray and sprinkle in 1/3 to 1/2 of the taco spice. Cook a couple of minutes to coat the beans. (You can add 1/2 tsp of olive oil if you like).

Follow my easy guacamole recipe. Combine one packet of the Wholly Guacamole with diced onion and diced, fresh avocado.

Warm the corn tortillas wrapped in foil in the oven or in microwave wrapped in moist paper towel (if you like them softer).

Simply layer tacos with beans, dairy-free cheese, scissor-cut Gardein strips, guac and sprinkle with parsley. Done!


Chipotle Barbecue Chick’n Strips with Tri-Smokey Vegetables

1 bag frozen peas
Fresh sliced carrots
Fresh sliced zucchini
1 tsp olive oil
1 T light tamari sauce
1 tsp liquid smoke
1 tsp onion powder
1 tsp garlic powder
1 tsp ground pepper
Your favorite barbecue sauce

This is a “go to” super quick alternative to the frozen bag of fried chicken nuggets or the drive through at McDonalds. There are nights when you’re super tired and desperate for a quick bite. By adding the smokey, savory vegetables on the side along with a tossed salad, you have all the protein, fiber, and complex carbs for a complete meal.

Cook the chick’n strips in the oven until crispy. Heat olive oil in skillet and stir fry frozen peas with fresh carrots. Add zucchini last along with remaining seasonings. Continue to stir fry to desired tenderness. Serve with your favorite bottled, low sugar, barbecue sauce for dipping.

Frozen vegetables are a great alternative. But these few just don’t make the cut and are much better fresh: carrots (except diced), zucchini, asparagus, yellow squash, okra, mushrooms, onions.
