Jalacado Grilled Cheez Sandwich

Complete Protein Whole Grain Bread
Earth Balance Butter Spread
Peppered Tofurky Deli Slices
Daiya Pepper Jack Vegan Cheese
Fresh jalapeño peppers, seeded
Olive oil
Dried minced onion
Lemon juice
Salt & pepper

1.  Lightly butter bread.

2.  Slice fresh jalapeños in half and remove seeds (wear gloves or use spoon). Grill jalapeños face down in skillet with a few drops of olive oil until they soften and start to brown.

3.  Mash ripe avocado with fork and stir in 1 teaspoon of minced dry onion. Stir in 1teaspoon lemon juice, salt and pepper to taste.

4.  Layer sandwich with deli slices, cheese, and jalapeños and grill as you would any grilled cheese sandwich.

5.  Add thick layer of avocado spread before serving.

Football season is right around the corner. Consider serving these upscale sandwiches with a cooler of cold beer at your first tailgate!
